There is a not-so-secret spot for the most fabulous truffled sandwiches in Florence. Procacci, on via Tornabuoni, has been around since 1885 and has long been the place for one of these little truffled sandwiches and a glass of prosecco (or tomato juice – they’re famous for this unusual combination). Although this isn’t their special recipe, this one is easy to replicate at home and makes a dainty, special occasion sandwich when you can get your hands on fresh black truffles. Remember that a little goes a long way with these flavours.

Ingredients

Quantity Ingredient
50g mascarpone
1 tablespoon finely grated parmesan cheese
1 teaspoon finely grated black truffle
4 mini brioche or soft finger buns, sliced in half lengthways

Method

  1. Combine the mascarpone, parmesan and truffle in a mixing bowl until you have a creamy paste. Season with a pinch of salt. Spread 1 teaspoon of spread onto each little bun.
