Raw artichoke salad

When in season, this refreshing salad is often served as an antipasto in Florentine trattorie. The bitterness of the raw artichokes is balanced out by the flakes of salty parmesan and the sourness of the lemon juice. It’s a wonderful combination.

Ingredients

Quantity Ingredient
2 lemons, halved
1.5kg artichokes, roughly 320 g cleaned artichokes
60ml extra-virgin olive oil
100g shaved parmesan

Method

  1. Squeeze the juice from half a lemon into a bowl of cold water and then drop the squeezed half-lemon in as well. This is to prevent the cut artichokes from oxidising and blackening.
  2. Clean the artichokes by trimming the stem to about 2 cm and peeling off the hard, outer layer of leaves until you arrive at a layer of tender leaves, pale in colour. Chop the top half of the artichoke off completely, slice it in half from top to bottom and use a teaspoon to cut out the fluffy inside if present (if it’s a younger, tender artichoke there may not be any need to do this). Trim the stem of the green outer skin. As soon as each artichoke half is ready, rub with half a lemon and place in the bowl of lemon water. When all the artichokes have been trimmed, slice them as thinly as possible and return the slices to the bowl of lemon water until all the artichoke is sliced.
  3. Drain and pat the artichoke slices dry, then place in a large bowl and dress with the juice of the remaining lemon, olive oil, and some salt and pepper to taste. Toss with the parmesan and serve.
