Florentines love fresh fruit to finish a meal and this is a really classy way to do it, especially when strawberries are in season. Even better, if you can find them, are wild strawberries, which are commonly found in late spring in Tuscany – small, sweet and very delicate, they have a melt-in-the-mouth quality about them.

This dish is inspired by a dessert on offer at one of my favourite Florentine trattorie, Sostanza, where it is served very simply with a dainty spoon.

Ingredients

Quantity Ingredient
400g wild strawberries
120ml red wine or red dessert wine, (such as sangiovese)
1 1/2 tablespoons sugar

Method

  1. Divide the strawberries into four shallow bowls. Pour a quarter of the wine over each dish and sprinkle each serve with 1 teaspoon of sugar. Serve immediately.

Note

  • Be sure to serve this dish as soon as the wine is poured over the strawberries. You don’t want to give them any time to marinate as they go soggy and lose their brightness.
