A retro salad that makes a great BBQ side. The green pepper adds crunch, the dried fruit sweetness, and it’s all brought together with a curry-powder-spiked dressing

Ingredients

Quantity Ingredient
200g basmati rice, plus 2 tablespoons
1 green pepper, deseeded and finely chopped
1 small red onion, finely chopped
1/2 bunch parsley, finely chopped
50g dried apricots, sliced
50g raisins
1/2 bunch parsley
25g flaked almonds, toasted
salt
freshly ground black pepper

For the dressing

Quantity Ingredient
4 tablespoons extra virgin olive oil
1 tablespoon white wine vinegar
1 garlic clove, crushed
1 tablespoon lemon juice
1/4 teaspoon sugar
1 teaspoon curry powder

Method

  1. Cook the rice in salted water according to the packet instructions. Drain, then spread it out on a tray and leave to cool. Meanwhile, mix together the dressing ingredients in a small bowl and season well.
  2. Transfer the rice to a large bowl. Add the green pepper, onion, most of the parsley, the apricots and raisins. Finely chop most of the parsley and add this to the bowl, pour over the dressing and mix everything together. Tear over the remaining parsley and scatter with the flaked almonds before serving.
