Cardamom baked pilaf rice

A simple fluffy rice accompaniment that’s perfect with Indian curries. Pop the dish in the oven and forget about it whilst you get on with the rest of the meal.

Ingredients

Quantity Ingredient
50g butter, plus extra for greasing
1 tablespoon sunflower oil
2 onions, finely sliced
10 cardamom pods, lightly bashed
2 teaspoons cumin seeds
2 sticks cinnamon
2 teaspoons fennel seeds
2 bay leaves
350g basmati rice
650ml boiling water
salt

Method

  1. Preheat the oven to 200°C. Melt the butter and oil in a large frying pan over a medium heat. Add the onions and a pinch of salt and cook for 10 – 15 minutes until golden brown. Tip in the spices and bay leaves and sizzle for 1 minute, then add the rice and ¾ tsp salt and stir to coat well. Cook for 2 minutes, then tip into a generously buttered baking dish. Pour over the boiling water, cover tightly with foil and bake for 35 minutes. Remove and rest for 10 minutes before serving.
