Potato waffles with pastrami & sauerkraut

The ulti-melt! A classic pastrami and gherkin sandwiched together between two potato waffles. Open wide: this tastes amazing.

Ingredients

Quantity Ingredient
250g mashed potato
30g plain flour
1 egg
1 tablespoon mayonnaise
2 heaped tablespoons sauerkraut
3 slices pastrami
3-4 cornichons, sliced, plus some pickled onions
60g swiss cheese
sea salt
freshly ground black pepper

Method

  1. Combine the mashed potato with the flour and egg in a bowl and season. Spoon the batter into a waffle iron and cook for 3–5 minutes until the waffles are golden brown.
  2. Turn the grill on high to heat up and put the waffles onto a plate or board. Spread the mayonnaise on one waffle and spoon over the sauerkraut. Lay the pastrami on top, then add the cornichons, pickled onions and Swiss cheese. Season.
  3. Close the sandwich with the other waffle and put it under the grill. Grill for 1 minute on each side or until the cheese has melted and the pastrami has warmed through.
