This is a simple green salad – but with this lip smacking vinaigrette, it cuts through a buttery, rich toastie perfectly. Use your favourite leaves, add some peppery rocket and season well.

Ingredients

Quantity Ingredient
1 lettuce, e.g. Little Gem, romaine, oak leaf or iceberg, roughly chopped or torn
handful rocket
1/4 cucumber, diced or shaved with a peeler
small handful parsley leaves

vinaigrette

Quantity Ingredient
1/4 garlic clove, grated
11/2 teaspoons dijon mustard
21/2 tablespoons white wine vinegar
6 tablespoons extra-virgin olive oil
1/2 teaspoon white caster sugar
sea salt
freshly ground black pepper

Method

  1. Make the vinaigrette in a large bowl by whisking all the ingredients together until fully combined. When you are ready to serve, add the salad to the bowl and stir through.
