This spiced, sugary apple toastie is just heavenly when dipped in warm custard.

Ingredients

Quantity Ingredient
30g pecans, chopped
100g caster sugar
1 teaspoon ground cinnamon
1 tablespoon salted butter, at room temperature
2 slices of soft white bread
250ml custard, to serve

Apple filling

Quantity Ingredient
1 bramley apple, peeled, cored and diced
2 tablespoons maple syrup
2 tablespoons butter
1-2 teaspoons lemon juice

Method

  1. Make the apple filling by combining all the ingredients in a medium saucepan. Cook over a low heat for 15–20 minutes, stirring occasionally, or until the apples are soft. If there is still a lot of liquid, continue to cook over a low heat until thickened. Turn off the heat and set aside.
  2. While the apples are cooking, toast the pecans in a dry frying pan over a medium heat for 3–4 minutes, shaking the pan frequently to ensure they toast evenly. Remove from the heat.
  3. Combine the sugar and cinnamon together in a small bowl. Put 1 tablespoon of the cinnamon sugar into a separate small bowl, add the butter and mix together.
  4. Spread the cinnamon butter over one side of each slice of bread, making sure it reaches right to the corners. Turn one slice over and add the cooked apple. Scatter over the pecans and top with the other slice of bread, butter-side up.
  5. Warm a frying pan over a medium heat and place the sandwich in the pan. Cook for 3 minutes, pressing down on the sandwich with a spatula to help crisp up the bread, or until golden. Flip it over and cook for a further 2 minutes or until both sides are golden and crispy. You can also cook the sandwich in a toasted sandwich maker or panini press if you prefer.
  6. Transfer the toastie to a plate, sprinkle it with the rest of the cinnamon sugar and let it cool for a few minutes: the apple filling will be very hot and can burn your mouth if you bite into it right away! If you are using custard, warm it in a pan or microwave while the toastie cools. Serve the toastie with the custard in a small bowl ready for dipping.
