Deep-fried bread with sugar and cinnamon

Ingredients

Quantity Ingredient
1 day-old baguette
3 large eggs
375ml milk
250ml condensed milk
230g caster sugar
1 tablespoon ground cinnamon
oil, for deep frying

Method

  1. Slice the baguette on a slight diagonal into eight 2 cm-thick slices.
  2. Whisk the eggs in a bowl. Add the milk and condensed milk and whisk to combine.
  3. Combine the sugar and cinnamon in a small bowl, then spread out on a large plate.
  4. Heat the oil in a large heavy-based saucepan to 180°C, or until a cube of bread dropped into the oil turns golden brown in 15 seconds.
  5. Working with a few slices of bread at a time, dip the bread in the egg mixture, then allow the excess to drip off. Cook the bread in the hot oil for 1–2 minutes on each side, or until golden brown.
  6. Coat the bread in the sugar and cinnamon, and serve hot.
