Ingredients

Quantity Ingredient
2 large ripe avocados
80g caster sugar, or to taste
2 tablespoons lime juice
250ml pouring cream

Method

  1. Cut each avocado in half and remove the stone. Scoop out and roughly chop the flesh, then place in a bowl with the sugar and lime juice. Blend until smooth using a hand-held blender.
  2. Add the cream in two batches and blend until creamy. Taste and adjust the sweetness by adding a little extra sugar, if needed.
  3. Divide the mousse among four small serving bowls or glasses. Cover with plastic wrap and refrigerate for 1 hour before serving.
