Festa Junina celebrations take place all over the country during June, in honour of St. John’s birthday. The festivities traditionally take place in a straw tent, where party-goers dressed in peasant costumes dance quadrilha, a traditional square dance, and drink the flavoursome quentão. This is a delicious and easy drink to prepare, and it’s perfect for winter.

Ingredients

Quantity Ingredient
200g soft brown sugar
2 oranges, zest cut into large strips
1 lemon, zested
50g fresh ginger, finely chopped
8 cloves, or to taste
2 cinnamon sticks, or to taste
600ml cachaca
1 green apple, finely chopped

Method

  1. Combine the sugar, orange zest, lemon zest, ginger, cloves and cinnamon sticks in a large saucepan. Cook over a medium heat for 2–3 minutes, or until the sugar has dissolved. Pour in 600 ml water, then simmer for 10 minutes.
  2. Pour in the cachaça and simmer for 15 minutes.
  3. Add the chopped apple and simmer for a further 5minutes to allow the flavours to develop.
  4. To serve, use a ladle to strain the hot drink directly into heatproof glasses.
