Toasted cassava flour with fried bacon and vegetables

Farofa is a common side dish in Brazil and no churrasco is complete without it. The key ingredient is cassava flour, an iconic ingredient in Brazilian cooking.

Ingredients

Quantity Ingredient
100g butter
250g bacon, diced
2 onions, diced
500g toasted cassava flour, (see glossary)
pinch oregano
pinch salt
pinch freshly ground black pepper
1/2 green capsicum, diced
1/2 red capsicum, diced
2 spring onions, thinly sliced
3 eggs, lightly beaten

Method

  1. Melt the butter in a large saucepan over a medium heat. Cook the bacon and onions for 4 minutes, or until browned. Gradually sprinkle with the cassava flour, oregano, salt and pepper. Stir in the capsicums and spring onions, and cook for 2 minutes, or until the vegetables are soft.
  2. Heat another saucepan over a low heat. Pour in the eggs and cook, stirring, for 1 minute, or until lightly scrambled.
  3. Stir the scrambled eggs into the bacon mixture. Serve hot or cold.
