Toasted cassava flour with plantain bananas

Ingredients

Quantity Ingredient
80ml oil
3 plantain bananas, sliced
40g butter
1 onion, finely chopped
pinch sugar
250g toasted cassava flour, (see glossary)

Method

  1. Heat the oil in a large saucepan over a medium heat. Cook the bananas for 5 minutes, or until golden brown. Remove from the pan and set aside.
  2. Wipe out the excess oil from the pan and add the butter. Cook the onion over a medium heat for 8 minutes, or until golden brown.
  3. Add the fried bananas and sugar, then gradually add the cassava flour, stirring constantly. Season with salt. Continue stirring for about 3 minutes, or until the flour is completely incorporated. Serve at room temperature.

Note

  • You can replace the plantain bananas with any type of banana.
