These roses are very quick and easy and there's no sewing. I used realistic colours but yours can be in crazy shades, if you prefer. They can, of course, be made months ahead.

Ingredients

1 Cherry and marzipan cake, baked in a round tin
1kg white sugarpaste
1 pot peach food colour paste
3 tablespoons apricot jam
icing sugar, to dust
3 x 1 m lengths 38 mm-wide wired ribbon, in different colours
80cm 35 mm-wide green organza ribbon
50g white royal icing
3 artificial leaves

Method

  1. Colour the sugarpaste the day before, if possible. I made a clotted cream tone, using a mixture of peach and primrose shades.
  2. Warm the jam gently in a pan, sieve it and brush all over the cake. Dust a clean work surface with icing sugar and roll out the sugarpaste into a circle roughly as big as the diameter and sides of the cake, and no thinner than 5 mm. Keep moving the sugarpaste and run a palette knife underneath it, adding more icing sugar if necessary. Lift the sugarpaste on to the cake with your hands, smooth it all over and cut away any excess. Run a palette knife under the cake and lift it on to your final cake stand or plate. Leave to set for at least an hour or so.
  3. To make a ribbon rose, take 1 m of wired ribbon and, as close as possible to one end, tie a small tight knot. From the other end, pull the wire out; the ribbon will ruffle. Ease it along towards the knotted end. Keep pulling on the wire gently until all the ribbon is ruffled. Starting at the knot end, twist the ruffled ribbon round and round the knot to form the central bud and ‘petals’. Secure with the wire tightly around the base and cut off any excess. Repeat with the other 2 ribbons.
  4. Wrap the organza ribbon around the cake and attach with a dab of royal icing at the back. Stick the ribbon roses in the centre and tuck in the artificial leaves.
