Blackcurrant, cassis, is a very popular berry in France. It has a powerful, intense flavour. In Australia, blackcurrants are mostly sold frozen.

Ingredients

Quantity Ingredient
1 orange, juiced
1 lemon, juiced
80g caster sugar
1/2 vanilla pod, split lengthwise
300g fresh or frozen blackcurrants

Method

  1. Combine all of the ingredients in a saucepan. Bring to a simmer, then cook for 5 minutes.
  2. Push the fruit through a fine strainer, then set aside to cool. Refrigerate until 10 minutes before serving.
