This lovely fruit sauce is perfect with vanilla and fruit ice creams and as an accompaniment to berries and stone fruits. You can omit the passionfruit if you prefer just a mango coulis.

Ingredients

Quantity Ingredient
1 large mango
1/2 orange, juiced
1 lemon, juiced
1 tablespoon sugar
2 passionfruit, pulped

Method

  1. Peel the mango and cut the flesh into pieces. In a food processor, blend the mango flesh, orange juice, lemon juice and sugar to a purée. If the mango is a little fibrous, strain the sauce into a bowl.
  2. Stir in the passionfruit pulp. Refrigerate the coulis until required. If it is too thick, add a little orange juice before serving. If the mango is not quite ripe, you may also wish to add a little extra sugar.
