Meringues are very popular and fun to make. They’re scrumptious with ice creams and sorbets or with a simple dollop of whipped cream.

Ingredients

Quantity Ingredient
3 large egg whites
pinch cream of tartar
115g caster sugar
50g pure icing sugar, sifted

Method

  1. Preheat the oven to 150°C.
  2. Using an electric mixer, beat the egg whites and cream of tartar until the whites stiffen. Gradually beat in half the sugar until the whites are shiny and becoming firmer, then beat in the icing sugar and remaining sugar.
  3. Line two baking trays with baking paper, using a little of the meringue mixture to stick the paper to the trays. Spoon the meringue mixture into a large piping bag fitted with a 1 cm nozzle and pipe finger-shaped meringues 6–8 cm long onto the prepared tray.
  4. Bake for 20 minutes, then reduce the temperature to 100°C and cook for 1 hour. Turn off the oven and allow the meringues to dry in the oven for 2–3 hours before storing them in an airtight container for up to one week.
