As a boy this was one of my five favourite desserts — along with crème caramel, fruit tarts, floating islands and ice cream. I still love it.

Ingredients

Quantity Ingredient
150g dark chocolate, chopped
80g unsalted butter, chopped
2 egg yolks
1 teaspoon instant coffee, (optional)
3 egg whites
pinch cream of tartar
2 tablespoons icing sugar
6 strawberries, to serve
grated dark chocolate, to serve

Method

  1. Place the chocolate in a heatproof bowl over a saucepan of simmering water. Whisk slowly until smooth, then remove from the heat. Whisk the butter into the melted chocolate, then add the egg yolks and coffee, if using, and whisk until smooth.
  2. Using electric beaters, beat the egg whites and cream of tartar until fairly firm. Add the icing sugar and continue beating until stiff peaks form.
  3. Using a large metal spoon, gently incorporate a quarter of the egg whites into the chocolate mixture, then carefully fold in the remaining egg whites. Gently spoon the mixture into a bowl and refrigerate for several hours or until set.
  4. Serve the mousse with the strawberries, sprinkled with grated chocolate.
