This is a truly luscious dish with a magnificent ruby-red colour. Dust it with icing sugar just before serving for a beautiful presentation.

Ingredients

Quantity Ingredient
1/2 vanilla pod, seeded
80g caster sugar
200g raspberries
200g blueberries
1 orange, juiced
1/2 lemon, juiced
6-12 red plums, halved and stoned
200g blackberries
icing sugar, for dusting

Method

  1. Mix the vanilla seeds with the sugar.
  2. In a food processor, blend half of the raspberries, one-third of the blueberries, the orange juice, lemon juice and half of the vanilla sugar to a purée. Strain this sauce into a jug.
  3. Place the plums, cut-side up, in a gratin dish. Sprinkle the remaining sugar over the plums and place under a hot grill until the sugar starts to bubble.
  4. Pour a little berry sauce in the centre of six serving plates. Place the plum halves on the sauce and arrange the blackberries and remaining raspberries and blueberries around the plums. Dust with a little icing sugar and serve.
