I often serve this noble fruit salad in early summer. You can serve it in individual glasses or from the centre of the table.

Ingredients

Quantity Ingredient
250g raspberries or strawberries
1 orange, juiced
1/2 lemon, juiced
2 tablespoons caster sugar
2 tablespoons kirsch
350g cherries, pitted
2 large mangoes, peeled and sliced
65g chopped almonds
6 scoops Vanilla ice cream

Method

  1. In a food processor, blend the raspberries or strawberries to a purée with the orange juice, lemon juice and sugar. Strain into a bowl and stir in the Kirsch.
  2. Add the cherries to the fruit purée and stir well.
  3. Gently stir the mango slices and chopped almonds into the fruit purée. Serve with a scoop of ice cream.
