Mango, kiwi and mint coupe

This simple refreshing dessert is ideal to round off a rich meal.

Ingredients

Quantity Ingredient
1 orange, juiced
1 lime, juiced
1 tablespoon caster sugar
6 mint leaves
1 tablespoon drambuie or brandy, (optional)
3 mangoes
3 kiwifruit

Method

  1. Combine the orange and lime juice in a mixing bowl. Stir in the sugar, mint leaves and Drambuie, if using.
  2. Peel the mangoes and kiwifruit. Using a melon baller, scoop out balls of mango and kiwifruit. Gently toss the fruit with the juice mixture, then refrigerate until required.
  3. Spoon the fruit and juice into small glasses or coupes to serve.
