Stewed cherries with strawberries and apricots

You can serve this yummy fruit concoction either on its own or with a selection of desserts at Christmas and festive occasions. It is also good with cream or ice cream.

Ingredients

Quantity Ingredient
250ml fresh orange juice
1 lemon, juiced
100g sugar
1 vanilla pod, split lengthwise
6 ripe apricots, halved and stoned
600g cherries, pitted
250g strawberries, hulled and halved

Method

  1. Combine the orange juice, lemon juice, sugar and vanilla pod in a wide saucepan and bring to a simmer. Add the apricot halves, cover and simmer for 5 minutes. Using a slotted spoon, transfer the apricots to a bowl.
  2. Add the pitted cherries to the syrup and simmer gently for 1 minute. Gently stir in the strawberries and cook for 1 minute, without boiling.
  3. Mix together the cherries, strawberries and syrup with the apricots and stir gently. Set aside to cool, then chill before serving.
