Summer pudding is a magnificent classic and it’s always nice if you can include some raspberries and blackberries or blueberries. Strawberries don’t work very well.

Ingredients

Quantity Ingredient
2 tablespoons caster sugar
1/2 vanilla pod, seeded
300g blackberries
300g blueberries
500g raspberries
1 sliced loaf raisin bread, brioche or panettone
berries, to serve
cream, to serve

Method

  1. Combine the sugar, vanilla seeds and 60 ml water in a large saucepan and heat until the sugar has dissolved. Add the berries and bring just to the boil, then remove from the heat.
  2. Line the side of a 2 litre pudding basin with the slices of raisin bread, trimming any slices that are too large. Trim a slice to fit the base.
  3. Pour the berries and juice into the lined pudding basin. Neatly arrange the remaining slices of trimmed raisin bread over the berries to form a lid. Cover the basin with plastic wrap. Place a plate that is slightly smaller than the basin on top to weigh it down. Refrigerate overnight.
  4. To serve, invert the pudding onto a large serving plate and lift off the basin. Serve with extra berries and cream.
