I’ve made this beautiful tropical fruit salad several times when cooking for French visitors. It is very refreshing at the end of a summer barbecue. It can be served with vanilla ice cream or a fruit sorbet.

Ingredients

Quantity Ingredient
1 orange, juiced
3 passionfruit, pulped
1 tablespoon caster sugar
1 mango
1/3 pineapple
1/2 pink papaya
12 fresh or canned lychees

Method

  1. Combine the orange juice, passionfruit pulp and sugar in a bowl.
  2. Peel the mango and pineapple, cut them into bite-sized pieces and add to the bowl. Peel the papaya and remove the seeds. Cut the papaya into cubes or scoop into balls, and add to the bowl. Peel the lychees and add them to the bowl. Gently toss the fruits together and serve.
