Making waffles is lots of fun and it’s best to cook them just before serving. I use an electric waffle maker. At home we eat the first batch while the second is still cooking.

Ingredients

Quantity Ingredient
150g plain
pinch salt
1 tablespoon caster sugar
125ml cream
125ml milk
2 eggs, separated
1 tablespoon dark rum, (optional)
60g butter, melted
pinch cream of tartar

Method

  1. Combine the flour, salt and sugar in a mixing bowl. Whisk in the cream, milk, egg yolks and rum, if using. Stir in the melted butter.
  2. Using electric beaters, beat the egg whites and cream of tartar until stiff peaks form. Gently fold the egg white into the batter.
  3. Pour the batter into a hot, greased waffle maker and cook until golden brown. Repeat with the remaining batter.
  4. Serve the waffles with jam, maple syrup, icing (confectioners') sugar, cream, ice cream or fresh fruit.
