Vegetarian burgers with coriander and cumin

It’s very easy to adapt this recipe to suit your personal taste by replacing the coriander leaves with parsley or basil, and the cumin with curry powder or mustard seeds.

Ingredients

Quantity Ingredient
400g canned beans, rinsed and drained
2 tablespoons olive oil
1 small egg, (optional)
2 tablespoons fresh breadcrumbs
1 teaspoon cornflour
2 tablespoons coriander leaves, finely shredded
1 small garlic clove, finely chopped
1/2 teaspoon ground cumin
salt
freshly ground black pepper
few drops lemon juice, (optional)
1 tablespoon pumpkin seeds
plain flour

To serve

Quantity Ingredient
2 wholemeal bread rolls
1 tablespoon olive oil
handful mixed salad leaves
4 slices cooked beetroot
or 4 slices cucumber
1 tomato, sliced
sweet chilli sauce

Method

  1. Tip the beans into a blender and blend to a coarse purée. Spoon the purée into a bowl and mix in half the oil, the egg (if using), the breadcrumbs, cornflour, coriander, garlic and cumin. Season lightly with salt and pepper then add the lemon juice (if using) and pumpkin seeds.
  2. With wet hands, divide the mixture in half and shape into burgers. Flatten gently to about 2 cm thick then dust lightly with flour.
  3. Heat the remaining oil in a non-stick frying pan and fry the burgers for 3–4 minutes on each side, or until golden brown.
  4. Cut the bread rolls in half and toast lightly under an overhead grill. Drizzle with a little oil, and arrange the bases on 2 serving plates. Top with a few salad leaves, 2 slices of beetroot and a few tomato slices. Place the hot burger on top and drizzle with a little sweet chilli sauce. Add the tops of the bread rolls and serve immediately.
