This lovely tangy dessert makes the perfect end to a special family dinner, and the kids will love it! You can create many variations to suit your taste, using whichever berries are in season.

The most attractive way to serve this dessert is in tall coupe glasses.

Ingredients

Quantity Ingredient
300g fresh raspberries
1 orange, juiced
1 lemon, juiced
2 tablepoons sugar, or less, to taste
250g strawberries, hulled (if large, cut into small pieces)
250g fresh blueberries or other berries of your choice
200g thick, greek-style yoghurt
8 tablespoons flaked almonds, toasted, to garnish

Method

  1. Place two-thirds of the raspberries into a blender with the orange and lemon juice and half the sugar and blend to a smooth purée. Push the purée through a sieve to extract the seeds. Add the remaining raspberries to the purée, together with the strawberries and blueberries, and stir gently to combine.
  2. Beat the yoghurt with the rest of the sugar.
  3. Spoon a little yoghurt into each coupe glass. Spoon on a little of the mixed berries, then another layer of yoghurt, and finish with berries.
  4. Garnish with toasted almonds and serve straight away.
