Citrus and pear salad with mint

During my childhood the family vegetable garden was surrounded by Williams pear trees, and ever since I have had a soft spot for pears. This dessert is a good example of how creative you can be with fresh fruit.

Ingredients

Quantity Ingredient
2 oranges
2 pink grapefruits
2 ripe, juicy eating pears
1 lemon, juiced
2 passionfruit, pulped
4 mint leaves, finely shredded
2 tablespoons flaked almonds, toasted
icing sugar, for dusting

Method

  1. Use a small, very sharp knife to peel the oranges and grapefruit, making sure you remove all the pith. Use a serrated knife to cut the fruit crosswise into 1 cm slices and arrange them in a large, shallow serving bowl.
  2. Peel, quarter and core the pears. Place the pear segments in a small bowl and add the lemon juice, passionfruit pulp and mint leaves. Toss gently then spoon on top of the citrus fruit. Sprinkle on the flaked almonds, dust with a little icing sugar and serve.
