Fresh mango cheeks with berry yoghurt

This is a lovely summer treat that’s easy to prepare. Mangoes are one of my very favourite fruits, although sometimes I make this dish with ripe peaches or apricots.

Ingredients

Quantity Ingredient
6 tablespoons natural yoghurt
1 tablespoon honey or sugar, (optional)
2 tablespoons milk
1 cup mixed fresh berries, (strawberries, blueberries, raspberries etc)
1 large mango

Method

  1. Place the yoghurt in a bowl with the honey (if using) and milk and beat until very smooth. If using large strawberries, cut them into small pieces. Add all the berries to the bowl and fold in gently.
  2. Peel the mango, then slice away the 2 cheeks from the stone and set them aside. Use a sharp knife to slice away the remaining flesh still clinging to the stone. Cut into small pieces then add to the berry yoghurt and fold in gently.
  3. To serve, spoon the berry yoghurt onto 2 dessert plates and arrange the mango cheeks on top.
