Poached apricots with vanilla and raisins

Sadly, the apricot season is all too short, so try to make the most of it by enjoying apricots fresh or poached. This dessert can be eaten warm or chilled, which is my preference. I sometimes like to scatter a few fresh berries over the chilled apricots.

Ingredients

Quantity Ingredient
2 oranges, juiced
1 lemon, juiced
2 tablespoons raisins
1/4 vanilla pod
or small piece cinnamon stick
3 tablespoons caster sugar
1kg ripe apricots, washed, halved and stoned
200g natural yoghurt

Method

  1. In a large saucepan, combine the orange and lemon juice with the raisins, vanilla pod and sugar. Add the apricots to the pan and bring to a simmer over a gentle heat. Cook for about 15 minutes, until the apricots are tender, then transfer apricots to a bowl.
  2. Serve warm or chilled with a dollop of natural yoghurt.
