After a special meal when everyone feels a bit full, I usually find that a lovely fruit salad is more appreciated than a rich dessert such as cake, pudding or a chocolate indulgence. You can make this fruit salad up to a day ahead of time and it looks stunning served in coupes or parfait glasses.

Ingredients

Quantity Ingredient
1/3 pineapple, peeled and cut into bite-sized chunks
2 oranges, juiced
1 lemon or lime, juiced
2 tablespoons sugar
6 lychees or rambutans, peeled and stoned
2 sugar bananas, sliced
1/4 small papaya, peeled and cut into bite-sized chunks
1 mango, peeled and cut into bite-sized chunks
2 passionfruit, pulped

Method

  1. Put a third of the pineapple chunks into a large mixing bowl.
  2. Place the remaining pineapple in a blender with the orange and lemon juice and sugar and blend to a smooth purée. Tip over the pineapple chunks and stir gently.
  3. Add the remaining fruit to the bowl and toss lightly. Cover with plastic wrap and refrigerate until ready to serve.
  4. Remove from the refrigerator 10 minutes before serving.
