While researching this book I was surprised to discover how many people eat porridge for breakfast. It certainly makes an excellent start to the day and is wonderful when jazzed up with dried fruit, fresh fruit or nuts.

In order to save time, you may prefer to microwave your porridge by cooking the oats, water and milk for one minute on high, uncovered. Stir well and cook for a further thirty seconds. Add the sugar or honey and serve with your choice of fruit and nuts.

Ingredients

Quantity Ingredient
3/4 cup rolled oats
1 1/4 cups water
1/4 cup milk
1 teaspoon brown sugar, honey or maple syrup
2 tablespoons dried fruit, chopped
1 small banana, sliced
1/2 tablespoon slivered almonds

Method

  1. Place the oats and water in a small saucepan and bring to a simmer over a medium heat. Stir well, then lower the heat and cover with a lid. Cook over a low heat for 5–10 minutes, stirring from time to time.
  2. Stir in the milk and sugar and continue to cook over a low heat for a further minute.
  3. Serve sprinkled with your choice of dried fruit, sliced banana and slivered almonds.
