Basmati is our favourite rice to eat at home for a family meal and it’s also one that nutritionists recommend. There are various ways of cooking rice but this method has always worked well for me.

Ingredients

Quantity Ingredient
1/2 tablespoon olive oil
1 1/2 cups basmati rice
1/2 teaspoon salt
2 1/4 cups boiling water

Method

  1. Heat the olive oil in a non-stick saucepan. Add the rice and salt and stir over a medium heat for about 2 minutes to warm the rice.
  2. Meanwhile, boil water in the kettle.
  3. Add 2¼ cups boiling water to the rice and stir briefly. Reduce the heat to a very low simmer and cover the pan with a tight-fitting lid. Cook for 14 minutes, then stir to make sure the rice isn’t sticking to the pan. Replace the lid and leave to rest off the heat for 2–3 minutes before serving.
