Stir-fried rice with vegetables

Our sons loved this dish when they were teenagers. It makes a great vegetarian dish if you leave out the bacon.

Ingredients

Quantity Ingredient
1 tablespoon vegetable oil
1/2 small onion, chopped
1/2 green capsicum, seeded and finely diced
2 slices lean bacon, diced
1 teaspoon curry powder
2 cups cooked rice, cold
1 cup cooked peas
1 cup cooked carrots, diced
100g bean shoots, roots trimmed, (optional)
2 tablespoons soy sauce
1/2 teaspoon chilli paste
handful coriander leaves, to serve

Method

  1. Heat the oil in a wok or large non-stick frying pan. Add the onion, capsicum and bacon and stir-fry gently for 3 minutes, or until the onion is transparent and just starting to brown around the edges.
  2. Stir in the curry powder, then add the rice, peas, carrots and bean shoots (if using), tossing over a high heat until the rice is warmed through. Stir in soy sauce and chilli paste, and serve sprinkled with coriander leaves.
