I adore soups, and firmly believe that they have significant health-giving properties! They have certainly been of great help to my own personal wellbeing over the years. When I feel a bit off-colour, or sense that I’m coming down with a cold, I find that a mixed vegetable or chicken soup works wonders. Because soups are fairly filling, they are also quite helpful whenever I want to lose a little weight. And because they are liquid, soups are great if you want to cut down on your consumption of alcohol with meals.

It’s easy to minimise the amount of salt you use in soups by adding finely chopped fresh herbs just before serving. If you want to transform a homemade vegetable soup (such as leek or pumpkin) into a more filling and nourishing meal, add a can of drained lentils or beans, some cooked basmati or brown rice, or serve it with a wholemeal bread roll. Yum!
