Smooth vegetable soup for kids

We introduced our children to this delicious soup when they were little and they loved it. However, it had to be very smooth so they couldn’t recognise any of the vegetables they thought they disliked!

Ingredients

Quantity Ingredient
2 leeks, roots and leaves trimmed
1 tablespoon olive oil
1 large carrot, peeled and diced
2 large potatoes, peeled and diced
2 litres water
or 2 litres Chicken broth
salt
freshly ground black pepper

Method

  1. Cut the leeks lengthwise into quarters, leaving them intact at the root end. Wash very thoroughly to remove any lingering dirt, then finely slice.
  2. Heat the olive oil in a pot and sauté the leeks for 3 minutes, stirring regularly. Add the carrot and cook for a further 3 minutes. Add the potatoes and water and season with salt and pepper. Bring to the boil, then lower the heat and simmer for 15 minutes.
  3. When all the vegetables are tender, remove the pot from the heat and allow to cool slightly. Tip into a blender and whiz to a very smooth purée. Serve with good bread.
