Prawn, mango and apple salad with a spicy dressing

This salad is perfect for a summer lunch or picnic – or even as part of a spread for a festive occasion.

Ingredients

Quantity Ingredient
12 raw prawns, in the shell
1 lemon, juiced
1/2 teaspoon medium curry powder
salt
freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 medium granny smith apple
1 celery stick, finely sliced
2 tablespoons walnut halves
1/2 avocado, diced
1/2 mango, diced
1/4 red onion, finely diced
4 medium cos lettuce leaves
few sprigs coriander, to garnish

Method

  1. Bring a large saucepan of salted water to the boil. Drop in the prawns and return to the boil. Turn off the heat and leave for 5 minutes. Drain the prawns then tip them into a bowl of ice-cold water to cool. Shell and de-vein the prawns and set aside in a cool place.
  2. In a medium-sized bowl combine the lemon juice, curry powder and a little salt and pepper. Whisk briefly, then add the oil.
  3. Peel and quarter the apple then slice finely. Add to the bowl with the celery, walnuts, avocado, mango, onion and prawns and toss gently so that everything is lightly coated with the dressing.
  4. To serve, arrange 2 cos lettuce leaves on each plate. Spoon the salad into the lettuce leaves, garnish with coriander sprigs and serve.
