I enjoy eating a salad sandwich several times a week and usually try to vary the bread, the vegetable filling and the spread (ricotta, avocado or hummus are my favourites). It’s easy to make this sandwich more of a meal by adding a slice or two of cold lean meat, such as chicken or beef, or some cheese.

Ingredients

Quantity Ingredient
4 slices wholemeal or multigrain bread
1/2 small avocado
or 4 tablespoons Hummus
or some ricotta
salt
freshly ground black pepper
1 tomato, thinly sliced
4 slices cooked beetroot
4 tablespoons alfalfa sprouts

Method

  1. Spread each slice of bread with a little avocado, hummus or ricotta and season with salt and pepper. Top 2 of the bread slices with tomato, beetroot and alfalfa sprouts.
  2. Place the remaining slices of bread on top, and press lightly so the sandwich holds together. Cut each sandwich in half and serve.
