Raspberries make a delicious coulis that is both refreshing and extremely versatile.

Ingredients

Quantity Ingredient
300g raspberries
1 orange, juiced
1 lemon, juiced
2 tablespoons caster sugar

Method

  1. In a food processor, blend all of the ingredients to a purée. Strain the coulis to remove the seeds, then refrigerate until 10 minutes before required.
