I love the flavour and texture of this pastry and it’s perfect for fruit tarts. It’s a bit fragile and breaks easily when you roll it out, but you can just press it back together with your fingers. You can roll it out on a sheet of baking paper and use the paper to lift it.

Ingredients

Quantity Ingredient
50g raw almonds
150g unsalted butter, cubed
1 large egg
2 drops pure vanilla extract
pinch salt
100g icing sugar
250g plain flour

Method

  1. Place the almonds in a food processor and chop into small pieces. Add the butter, egg, vanilla and salt and briefly blend until the butter has softened slightly. Continue to blend, gradually adding the icing sugar and flour until the pastry is well combined.
  2. Form the pastry into a ball using your hands. Flatten it slightly, wrap in plastic wrap or foil and refrigerate for at least 1 hour before using.
