Kiwi, banana and strawberry gratin

Use any fruit of your choosing in this wonderful, inexpensive treat for the family. Perfectly ripe fruit will produce the best results.

Ingredients

Quantity Ingredient
6 kiwifruit
2 bananas
200g strawberries
4 egg yolks
2 passionfruit, pulped
100g caster sugar
125ml thick cream, whipped until firm

Method

  1. Peel and cut the kiwifruit and bananas into bite-sized pieces. Place in a 25 × 20 cm gratin dish. Hull the strawberries, cutting any large ones in half, and add to the dish.
  2. Combine the egg yolks, passionfruit pulp and sugar in a heatproof bowl. Place the bowl over a saucepan of simmering water and whisk until light and fluffy. This is called a ‘sabayon’. Remove from the heat and set aside to cool a little.
  3. Fold the whipped cream into the sabayon, then spread on top of the fruit.
  4. Place the gratin dish under a hot grill (broiler) for a few minutes or until the top is golden brown. Serve immediately.
