I love baked peaches and this crumble is really special. Make sure the peaches are ripe and juicy.

60g chilled butter, cubed
55g caster sugar
pinch salt
60g plain flour, sifted
60g ground almonds
6 ripe peaches, halved and stoned
30g butter
30g caster sugar
2 tablespoons lemon zest
half orange, juiced

Method

  1. Place the crumble ingredients in a bowl and mix with a wooden spoon or the tips of your fingers until the mixture forms a crumbly dough. Place on a plate and refrigerate while you prepare the peaches.
  2. Preheat the oven to 180°C.
  3. Cut each peach half into three segments. Melt the butter in a large frying pan. Add the sugar and lemon zest and bring to the boil. Add the peach segments and toss gently for 2 minutes. Stir in the orange juice. Transfer the peaches to a bowl.
  4. Pour the cooking liquid into a 25–28 cm square ovenproof dish and arrange the peach segments on top. Sprinkle the crumble dough over the peaches.
  5. Bake for 20–25 minutes or until the topping is golden.
