From the Burgundy region

This is one of the most famous French regional dishes. Allow enough time to cook the dish slowly and well. It’s perfect for a winter dinner party as it can be prepared in advance and enjoyed with a great red wine.

Ingredients

800g beef cheek
1 brown onion, finely sliced
2 shallots, finely sliced
2 garlic cloves, crushed
1 sprig thyme
or 6cm sprig rosemary
300ml red wine
3 tablespoons olive oil
salt
freshly ground black pepper
2 teaspoons butter
1 tablespoon plain flour
120g bacon, cut into small pieces
16 baby onions
25 small mushrooms
4 tablespoons chopped parsley

Method

  1. The day before you cook the dish, trim the beef of excess fat and sinews and cut it into 4–6 pieces. Place in a bowl with the onion, shallot, crushed garlic and the thyme or rosemary. Cover with wine and stir in 1 tablespoon of the olive oil.
  2. The following day lift the meat, onion, garlic and shallots from the wine and place on a towel to dry. Reserve the wine and herbs as well. Season the meat with salt and pepper.
  3. Preheat the oven to 140°C.
  4. Heat 1 tablespoon of oil in an ovenproof saucepan or casserole dish and brown the meat on all sides. Add the butter to the pan, followed by the reserved onions, shallots and garlic, and stir well. Sprinkle on the flour and stir well. Add the reserved wine and stir well, then add the herbs. Cover with a lid and cook for about 2 hours, or until the meat is tender.
  5. Meanwhile, heat the remaining tablespoon of olive oil in a frying pan and sauté the bacon over a medium heat for a few minutes. Remove the bacon and set aside. Add the baby onions and brown well all over. Set aside the onions and cook the mushrooms for 2 minutes.
  6. Towards the end of the 2 hours, add the bacon, onions and mushrooms to the casserole and stir in well. Return to the oven and cook for a further 20 minutes.
  7. Serve sprinkled with chopped parsley.
