A tagine is a conical clay vessel used for preparing hearty casseroles. The combination of meat or poultry with dried fruit is typical of Moroccan cuisine.

Ingredients

Quantity Ingredient
1 chicken, cut into 10 pieces
1/2 lemon, juiced
2 teaspoons chicken stock powder
500g dried apricots
500g pitted prunes
1/2 teaspoon ground black pepper
120g honey

Method

  1. Preheat the oven to 150°C.
  2. Wash and pat dry the chicken, then rub it with lemon juice and stock powder.
  3. Place all the ingredients in a tagine or a baking dish and cover with foil. Bake in the oven for 1 hour.
  4. Mix the ingredients and bake for another hour, uncovered.
