Ingredients

Quantity Ingredient
1 1/2 cups flour, sifted
1 teaspoon baking powder
1/4 cup sugar
3 eggs, beaten
1/4 cup vegetable oil
sugar, for sprinkling

Method

  1. Preheat the oven to 200°C.
  2. Place the flour, baking powder and sugar in a bowl. Make a well in the centre and add the eggs and oil. Beat well.
  3. Divide the dough into three pieces. If it is sticky, knead in a little extra flour. Roll it out very thinly (if you have a pasta machine, push it through the machine). Brush the dough sparingly with oil and sprinkle generously with sugar. Press the sugar down slightly with a rolling pin. Cut the dough into rectangular shapes about 6 cm x 10 cm. Line a baking tray with baking paper, place the shapes on the tray and bake for 6–8 minutes. (Watch carefully, as kichel burn very quickly.) Store in an airtight container.
