This quick pasta dish uses fresh tomatoes, garlic and basil. It is a great summer dish served cold.

Ingredients

500g fusilli

Sauce

Quantity Ingredient
8 roma tomatoes, skinned, deseeded and chopped
3 garlic clove
160g olive oil
1 teaspoon salt
8 basil leaves

Method

  1. Place the tomatoes in a bowl with the garlic, oil, salt and basil. Leave the ingredients to rest for half an hour to allow the flavours to infuse.
  2. Cook the fusilli in boiling salted water until al dente, about 10 minutes. Drain the pasta and add the sauce. Mix, cool and serve.
