Ingredients

Quantity Ingredient
1kg frozen spinach, defrosted
1 tablespoon vegetable oil
2 tablespoons plain flour
1 clove garlic, minced
2 eggs, beaten
1 teaspoon salt

Method

  1. Drain the spinach. Heat the oil in a saucepan, add the flour and stir to make a paste. Add the garlic and spinach and stir for a few minutes until well combined. Gradually incorporate the eggs while stirring. Add salt to taste and simmer on moderate heat for 5 minutes.
