Ingredients

Quantity Ingredient
2 tomatoes, diced
1 lebanese cucumber, diced
3 radishes, diced
1 fennel bulb, diced
1 capsicum, diced
1/2 radicchio
2 cups rocket

Dressing

Quantity Ingredient
1 lemon, juiced
1/3 cup pomegranate molasses
1 garlic clove
1 cm knob fresh ginger
1/3 cup walnut oil
1/2 teaspoon sesame oil
10 mint leaves

Method

  1. Pulse the dressing ingredients together in a blender. Remove to a bowl or jar, season with sea salt and freshly ground black pepper and refrigerate overnight.
  2. Just before serving, combine the salad ingredients in a large bowl. Toss the dressing through and serve with any main meal.
