Ingredients

Quantity Ingredient
2 tablespoons olive oil
1 onion, diced
3 tomatoes, diced
1 red capsicum, diced
1/2 teaspoon oregano
1 garlic clove, diced
500g okra
coriander, chopped, to garnish

Method

  1. Heat the oil in a frying pan over medium heat and sauté the onion until lightly golden.
  2. Add the tomato, capsicum, oregano and garlic and stir until the tomato has broken down and the capsicum has softened.
  3. Add the okra. Cover and cook over low heat for 15 minutes, until the okra has softened. Season to taste with sea salt and freshly ground black pepper. Serve garnished with coriander.
