Ingredients

Quantity Ingredient
3 quinces
2 cups sugar
1 tablespoon lemon juice

Method

  1. Peel the quinces and cut into segments. Reserve the seeds and wrap them in muslin — the seeds are essential to develop the beautiful ruby-red colour.
  2. Bring the sugar, lemon juice and 1½ cups water to the boil in a saucepan, stirring to dissolve the sugar. Reduce the heat to low, then add the quinces and the muslin-wrapped seeds. Simmer for 30 minutes, until the syrup becomes very thick and the fruit has softened.
  3. Allow to cool before serving.
